Bologna’s favorite dish

I spent almost a week in Bologna trying the same dish, tagliatelle al ragu (or, in simple terms wide noodles with meat sauce) each day in different restaurants. Each meal was amazing. But what I learned was that sometimes, the part of the dish you think will be the star gets outdone by its less flashy co-star.
